I have an AMC 360 that I tore down for inspection, all is good and it has been reciently rebuilt.
The question I have is do I use the valley pan or disgaurd it and just run an intake gasket.
The other question is if i use the valley pan can i reuse the old one, kinda need to know because when i go to order the gasket kit the valley pan or the intake gaskets are not included.

Any help would be great

The valley pan gasket keeps hot oil off of the intake - it is the best gasket for the AMC v8 and you CANNOT reuse them.

Just purchase another VP gasket...

Is this the metal piece under the intake? If so why can you not reuse it? I took the intake off and pulled the metal piece to inspect the my AMC 304 when I got it to confirm it was rebuilt. I reinstalled the metal piece but did not bolt the intake down yet...

You can not reuse a valley pan once a intake has been torqued down on it it flatens it out to where it will not seal again. They are a one time only part unless you don't mind oil leaks.

As I stated in my prior post and mtnwhlr confirmed you CANNOT reuse the valley pan gasket. It is not 'a metal plate', it is a gasket.

As stated above do not re-use that part. I did the first time I opened the 360 on my GW and my engine leaked oil constantly.

And coolant leaks....

Well I don't have a valley pan on my intake that I can remember. Just the metal pan. Unless this is the valley pan...

Yes that's what is called a valley pan. You can not reuse them.
