Is there anything I should do to protect the inside of my steel tank until I'm ready to work on it? Also, if anybody can point me to a thread on how to restore the tank (inside and out) that would be appreciated. It's in good condition and not leaking. I just want to clean it up and get it back to like-new condition.

I've tossed a chain in and shook it around to knock off any rust then flushed it out until it was clean. Then add your favorite tank sealer.
