1981 CJ-8: SBC, SM465, D300, 4.5" R.E. Extreme, 35" BFG MTs, 20/30 with 4.56 Gears, Detroits F&R, Moser/Warn axles, XworX Full Cage
Since the CJ never came with this combo... wondering if any of you guys know which - if any - shift plate comes the closest to lining up with an SM465/Dana 300 combo.

I have no idea what stock plate would work for you, but its a pretty simple matter to build one once you get everything lined up the way you want.
If nothing else, take a cardboard template to a sheetmetal guy or fabricator and have them make you one.

I think this'll be the route I go - I have a plate for a T-5 (I think) and a Dana 300 ... it may work as is, with some modification or as a template for a scratch-built plate.

That's pretty much what I did for mine. I made a template out of cardboard and cut it out of 18 steel.
