Total Noob questions

Hi guys, I'm brand new to the world of CJ's and just scored a super deal, at least in my opinion. I traded my '94 XJ for an '84 CJ7 and have a couple questions.
I have the AMC 4cyl, the 4spd, and to the best of my knowledge, AMC20 , Dana 30 , and Dana 300 all bone stock. Fiberglass tub, metal w/s frame and front clip. Absolutely no idea on gears.
I drove this home last night and while fun, it needs a little help for freeway driving. I am a pretty fair mechanic when it comes to SBC and have done everything from full race to street rods.
What I want to know is;
Can I strip ALL the emission equipment from this little beast and add a Weber 32/36 on it and get a little more freeway manners? I ask, because I don't want to spend $300 and get zero improvement. Trust me, I realize I'm not going to transform the little AMC 150 into a speed demon, I'm just looking for a little better ability to maintain 65mph. As to the emission equipment, I live in a non emission county and on top of that it's more than 25 years old, so no worries there.
