I wondering what the difference would be in running a mc2100 2 barrel carb on by 360 v8 instead of the elderbrock 4 barrel thats on it now

On a V8 I would stay with the 4 barrel.

There would be a lot of differences, what are you looking for?

Unless you are drag racing! The MC2100 will give you plenty of CFM.
They come in a variety of venturies!
If you are off-roading? Its about as good as you can get for a carb.

This is a good friend of mine with a 360 with a 1.08 MC2100
