What have others used to protect cast iron parts from rusting? I'm aware of the various cast iron looking paints, but wondering if others have had success with clear coat instead. Thinking of pros/cons, with cast colored paint I could start with primer, so I suppose there would be better adhesion than clear over bare metal, but with clear coat I suppose the part would look more natural. Curious to know how others have approached this.

I did this with a new master cylinder........ degreased well and hit with wheel clear coat. Lasted a couple months - Brake fluid is death to paint....... But they do make brake caliper paint - if they make a clear I’d go that route. But don’t expect a MC to stay nice long - seams the brake fluid will creep ever so slowly out from under the cap

Can't help with the clear-coat question, but brake fluid will eat away at the brake caliper paint, too. I painted my new MC (after scrubbing and degreasing) with silver brake caliper paint about 4 months ago...it's holding up better than krylon, but I dripped a little fluid on it and wiped it off and paint came off along with it.

What are you looking to paint?

It would depend on the clear coat. You would have to be sure to get a direct to metal clearcoat. Personally I think the cast colored paint would look better.
