New Jeep-where to start?

- 1979 Jeep CJ5 with '72 304 V8, MC2100carb,T150 trans, AMC20 rear diff with locker, Dana 30 front diff, Dana 20 Tr Case, Procomp Springs, Gabriel Ultra shocks.
I just bought a '79 CJ5 that I am looking to rebuild. When I got it, it was running pretty rough, particularly it was stalling out when accelerating from a stop and simply running rough but it starts and idles fine. I rebuilt the carburetor, replaced the air filter and the inline gas filters and it still is doing the same thing. So, I am thinking of replacing the PCV valve and the thermostat. This thing has been driven pretty hard and not taken care of, so all these things need to be replaced just so that I know where I stand on it. There were also some leaks in the exhaust which are being resolved today. My question is, when getting a project vehicle such as this what are the first things that you, as experienced Jeep owners, do to it. Are there some specific things unique to the Jeep that I should be looking at?
