I have a 1964 CJ5 with a Dauntless Buick 225 V6 6cyl. What is the normal operating temperature. I've read all kind of things, from 190-220. Any help is appreciated.

190 - 220 is perfect
Gotta love the 225 V6, a torque monster!
 
The 225 came from the factory with a 190° thermostat.
I run a 180° summer and 195° winter, no fan shroud in my 225.
Summer, I run anywhere from 180°-200° (200° idling/crawling offroad)
Winter, 195°-200°
I need to change back to 195° soon, I'm running 160°-180° this fall (on or offroad).
If you ran a 190° thermostat it would start to open between 180° to 192° and fully open at 202°.
If I could find a 190° thermostat I'd use it, but I haven't looked real hard for one.
This is Northeast and Colorado weather conditions

Drop in a 195F thermostat and be done with it. Test it on the stove top to open initially at 195F first before installing.

Running a 180 in the summer is strange. Must have cooling system issues. Proper cooling system doesn't need a 180 in the summer. Remember these engines barely break 100-150HP.

The thread is about a 225 not AMC 258 i6 / 4.2l
The AMC 232 i6 and AMC 258 i6 / 4.2l run at 100-150hp, not the 225
Many folks running 180 in the 225
Check out any forum where their main focus is a 225.
You should do your homework.
