2.5" backspacing with 15x8" wheels

- FORMER: 1979 Jeep CJ5 w/ stock 304 V8, T-150, Dana 20 transfer case, Dana 30 Front & AMC 20 rear, MC 2100 carb, 31x10.5x15 (8" wheels), no lift (HD leaf pack), Warn 8274 winch, ~99K miles.
I've got 31x10.5x15" tires on 10" wide wheels (stock narrow track). I don't like the balloon sidewall bulge -- which seems very vulnerable pushed out that far. I'm thinking of switching to a 15x8" rim with 2.5" backspacing and keeping the same tires. The current wheels extend slightly past the fender flares (wider than the actual tread). I'd like to keep the tire just inside the fender's edge to add stance width while remaining legal.
Does anyone have experience with this size tire & wheel with 2.5" backspacing (and pictures)? I figure I'll need to do some measurements, but I'm hoping for some first-hand feedback.
I run about 80% on the street and 20% on logging trails. A little mud and snow, but no significant rocks. I've not dropped the psi below 20 out of bead busting concern.
