I've completely re-wired my '73 but not with a wiring kit or anything. It starts and runs fine and everything else works but after it warms up, the ignition (key switch) doesn't cut off the engine when I turn it off. I can take the key out and this thing is still running. It's not the switch but something in the way I wired it which was by the Haynes manual. It actually idles smoother when in the off position and seems to pick-up 40-50 rpm.

My question: What actually cuts of the engine? Which wire running from where to where interrupts the circuit or is no longer hot?
 
When you turn off the key that should stop 12 volts from going to the smaller wire on the coil that is marked with the +. You can check to make sure you loose 12 volts as soon as you turn off the key but I wouldn't be surprised if that's not the problem.
It is called dieseling when an engine continues to run after the key is turned off. Usually it's caused by too much carbon build up in the cylinder.

It stayed on permanently but I figured it out. I went through everything again and realized I wired the alternator to the positive output on the voltage regulator and not the continuous positive post with the battery cable. Made the switch and everything starts and stops as it should.
