Just about anybody in here will advise you to find the rig that is as close to stock as possible. When it comes time to find parts for it it is handy to know what the parts are from. If you want a 350 chevy you should put it in yourself, that way you know what you have and you know how well it was done. There is a lot to be said for a Jeep that is still all Jeep.
