With a standard u joint set up, you want your pinion angle to offset your output angle on the t-case. If your output on your t-case is 3degrees down, you want your pinion to be 3 degrees up. If you don't have an angle finder, you can take a coat hanger and bend it to match the angle from the t-case to the driveshaft, then turn the coat hanger upside down and make your pinion to driveshaft angle match it, you should be ok. On a dual cv, you want the pinion pointing about at the t case output and t-case can stay where it is at.
