Should be simple, right? I just don't want to break it, do you pry on the top and bottom to release it?

You shouldn't have to pry. If it's really that stuck, you might try using a small flat head screw driver to get started separating the engine and headlight harnesses from the junction.

All you have to do is remove that center bolt from the engine compartment side, and then pull the wiring junction straight out. If you're looking at the firewall from the engine compartment, the junction that houses engine harness is the larger piece of plastic that plugs in. So you want to pull on that part of it. The headlight harness junction slides into the engine harness junction, if that makes sense. Hopefully these pics explain it better than I am doing:
 
Like ZaCJ7 said all you should have to do is pull the bolt out of the center and it should come right apart.

There's a bolt, well now it makes sense. I can see it in the picture but could not live. Thanks ZaCJ7, I'll get that bad boy off tomorrow and ill be a step closer to pulling the engine!

Came off without an issue. The PO liked spray paint and got most of the contacts covered. I'll be replacing the fuse panel as part of my rebuild.
