How a bout a recipe or a favorite snack / quick bite?


Here is one I whipped together last night. It is one of my favorites!

  • 2 Fresh LARGE chicken breast - de-boned.
  • Assorted vegetables (I prefer mushrooms, green, yellow and red peppers (for color) , onions, celery and ...
  • Box of stuffing (Italian or herb type).
  • Good bottle of wine (your preference).
  • Herbs, salt, pepper, butter...
Preheat Oven to 350.
Butterfly chicken breast, season as needed.
Make stuffing as instructed but DOUBLE butter!
Heat a skillet and olive oil to VERY hot, sear chicken the remove.
Deglass the pan with the wine (get all those seared bits!), then very lightly saute vegetables (flavor as needed).
Remove vegetables and stuff into butterflied chicken.
Coat / wrap stuffed chicken with stuffing (you will have to use your hands).
Place back in skillet, coat with leftover saute bits.
Bake for 20 min at 350.

Enjoy butterflied chicken ala CJ!
 
That sounds good and all , but you dont say anything about the rest of the wine:poke:
 
Whew ! I'm glad you didnt suggest corkin it back up ! My wife makes this but serves it over pasta instead of stuffing, mmmmm , getting hungry :drool:

Lazy man stew:

Get a packet of McCormick beef or veg. stew seasoning.
1lb. of you fav. meat
2 cans of beans your choice
2 cans of tomato, crushed and stewed
2 cans of corn
2 cans of mixed veg.
an onion
a jar of mushrooms
1 can of carrots

Open said cans and dump them in a pot (don't drain them you need the liquid)
Add the McCormicks seasoning and the onion.
Mix it up good, and bring to a boil, then turn it down to a simmer.
Cook up your meat if you want meat in the stew.
Add the meat to the stew and simmer for about an hour so things can mix and marinate.

Eat what you want, put some in the fridge and freeze the rest for later.

This can be made with just about any mixture of canned veg. just make note of salt content of the cans, I go low or no salt so I can add it later if needed.

Big diff Hole... I don't server it OVER stuffing, I wrap it in the stuffing and then bake! Give it a try! It's great! :notworthy:

Mine don't cook so hot anyways..so thats not saying much for my culinary skills! :laugh:
 
bacon wraped chicken breast
and brown rice

boneless chicken breast (I do 6 at a time)
bacon (of your choice)
16 oz sour cream
2 10 oz of cream of mushroom soup

mix sour cream and cream of mushroom soup together
take chicken breast and wrap in bacon ( easy parts done) ( i put 2 pieces of bacon on each breast)
Place in pyrex dish cover breast with sour cream mixure
leave uncovered
pre heat oven to 350
cook for 1 hour

brown rice
1 cup of rice
2 cups of beef consume or beef broth
1 onion
small can of stems and peices mushrooms

1 sick of butter
saute mushrooms and onions with butter
place in the bottom of 9x13 pyrex dish
pour beef consume in then rice over the top
place in oven with chicken and cook for 45 to 50 min watching not to burn the rice


remove from oven and enjoy
Just a hint pour the sauce over rice

Will do! I was in a hurry when I read it the first time, totally missed the wrap part :eek:
 
My husband could burn water.
My dad on the other hand is an awsome cook. I will have to get some of his recipes for you guys. As long as you like it firehouse hot :)
 
Got rained out so I came in early today. On the way home, I picked up tonights supper..... all 8 lbs of it. mmmmmmmmmmm.........:drool:
