If you have eliminated fuel as your problem I would look at the ECM too, Here I go again..The FSM has the test prodedure using a simple ohm meter(if you don't have one get one you will use it often). The thing about the FSM is you get one for your year Jeep and it does cover the different models for that year but not over a ten+ year time frame so you don't have to sort through all the unrelated material and it is in greater depth than a Chiltons for example.
If you still have your old fuel filter cut it open and it will tell you about whats been in your tank and if it's bad enough your new filter could allready be choked up.
 
We had the exact same problem on a trip once. It drove us nuts. We changed carb, filer, pump and other assorted items. It ended being a pinched fuel line where the body mount had settled by the tank, it would allow the engine to run but on long uprades or sustained high speed driving, would starve for fuel. We only figured it out after dropping the tank.

First, I'd like to say I think I have fixed the problem (or I'm not seeing the problem anymore). I'll just list what I did and found to maybe help anyone else with similar problems. I did buy and install lots of new parts, probably ones that didn't need replacing because I am an amateur mechanic who doesnt really know what I'm doing but have learned a lot along the way.
-Dropped fuel tank and replaced the sending unit (it was dirty and clogged)
-Installed new ECM
-Installed new Ignition control module (which I belive was the major problem)
-replaced some cracking fuel hoses
-new fuel filter and fuel pump
-replaced just about all vacuum lines and made sure there were no leaks (there were)
-installed new carb
-blew some air through fuel lines
-adjusted carb slightly
-reconnected oil pressure gauge (it cam e loose)
-new ignition coil
-new plugs (properly gapped) and plug wires
-drank lots of beer and cheep wine

the only problem I have now is it dies when I am driving and come to a stop. I just found a kink in the line next to the fuel tank so hoping that might be why it dies. I do not have a power breaks so I don't think its a vacuum problem.

Glad to hear you did the right thing and pulled the tank to get at the root of any fuel system issues.:chug:
Hope you were able to get it cleaned out good to, I know it's hard to get stuff out of there through the access.
I would say it's a carb. issue if it's dieing while rolling to a stop and then refires?
