The way I see it you don't really have a carb return spring installed. What you have marked is a basic return spring but not much of one. I would suggest look around like on the net for pic of a carb return spring like this one:

Sorry I can't send you a pic of mine since I have a throttle body injection. I would suggest you go down to the auto parts and pic one or two up. and mount it so you get full travel of the throttle shaft, without it binding up.

I wonder if the spring just came off completely? I'll ride my bike down to the stop sign it happened and search around if I can find one... I've been debating on replacing with a completely new unit just to rule out any other bugs

Well after looking at some old pictures I've never had any type of spring other than the one in question that I marked with the green circle.
 
On my throttle body, I do have a spring like yours, but it is not very effective. So it was overriden with an outboard spring. Plus I carry a spare and have had to lend it out to friends on the trail when theirs went bad.
