I rewiredmy 81 a few weeks ago. Since then my brake pedal has been squishy. I didn't do anything to brake system during the rewire and there were no wires connected to it. I used the Painless harness.
I am scratching my head over this one as I have checked the system and there is no air in the lines and my MC is full.

That was one of my first thoughts too but it feels as if the brake pressure is building slowly when the pedal is pressed. If I pump the brakes it stiffens up and feels like it did pre-rewire.

I had a similar issue my problem was a broken cable in my rear drum. The cable was the one that keeps tension on the shoes.

I know you're not going to like this answer, but the only explanation for a pedal that starts soft and then gets stiff after a few pumps is air somewhere...possibly a break in one of the lines somewhere.

I changed rotors and pads a couple months ago, and had squishy brakes when I was done. Never had an issue like that before, but I bled the brakes and all was well afterwards.

Nothing you did with the new wiring harness would have caused a soft pedal. Just coincidence, or you hurt a brake line somewhere.

If you are using dot 3 or 4 (glycol / oil based) it absorbs water and can lead to a soft pedal. Dot 5 does not but is not suitable for the wheel / disk / master cyl. seals (swelling.) Just an FYI - never mix brake fluid versions.
 
I guess step 1 will be bleeding the breaks again. Start from cheapest fix to more expensive

I would first check the M/C fluid level. If low inspect all the brake lines and fittings for leaks.
 
Start with a good general inspection look for warn and broken parts. Ur pedal can be spongey due to warn parts and having to travel farther before making contact hence the pumping before getting a stiff pedal.
