I'm trying to remove the pedals and I'm having some issues with the parking brake - I can't get the cable out. I tried a flat head under the head of the cable to push it up and through the 'window' to remove it and not having any luck. How do I remove this? Any pictures / videos / references you guys have?

Easiest way to go about it is to pull the cable out of the sleeve some how or another and clamp that end in some vise grips. Then you have the slack necessary to remove it.
 
Go under your Jeep and loosen the tensioner that tightens the cables. You should have enough slack after that. Mine was located about 2 feet in front of my rear axle dead center of the jeep.
 
Found the tensioner under the driver side - I loosened it a bit and it gave me just enough play to pull the cable out of the top of the brake assembly. Thanks a ton, been struggling for quite a while on that one
