Putting a 5.3LS and 4L60E into my 1979 CJ7 . The tranny came with the torque converter, although I don't know what car or truck it came out of. I was told the stall is 1800 - 2000 RPM. Is that appropriate for my build? I will be using it for offroading (think Rubicon trail). Seems OK, but wanted to get input before I bolt it together. I see no markings on the converter.
 
Generally lower stall speeds can sometimes feel like they are slipping, especially on the lower end. Doing a lot of offroad on trails is going to keep you on the lower end most of the time. Of course a benefit to your combination is the lockup feature, although you must be in 4th for that to kick in.

Some of your consideration must also be your axle gearing and tire size. Basically, at what RPM is the engine for various speeds. I wouldn't go with anything lower than a 2200, but probably better in the 2500 - 2800. Definitely not higher than 3000 for an offroad vehicle. That would be more for acceleration and speed, not torque on a trail.

The GM 92-2200-2500 is probably a good choice. The Transmission -One C65 is a heavier duty similar unit used in Chevy trucks - a bit more money - in the 2500-2800 range. I used the Assault Racing Products 600013 in my rig. This is a 2400 - 2800 stall speed unit. Middle of the road speed wise. I didn't want a 2200 or lower since I do a lot of street driving and did not want above 3000 due to some offroad use and no racing. I have an SBC and 700R4. Mine sees a lot of street driving and some Limited offroad (camping, deer lease, etc). No hard core trails or rock climbing.
