E street kit or LS?

I am really torn on my motor choice for my Scrambler project. I have a Chevy 350 that I built a few years ago and it is currently in my CJ5 . I do not want a V8 in my 5 anymore and plan to do a full stock restore on it someday. The CJ8 is full on restomod so anything goes within budget of course. The Chevy 350 is built very solid and I did a lot of work to the lower end to make it a very bullet proof mill. I spent a fair amount of cash on it over the years in the $5000 range. Well with the Scrambler I want a V8 with good power but the 350 sucks the gas like a college kid and a funnel at a party.
SO I have two options that I am entertaining. Keep the 350 that I spent so much time on and drop another $2000 on the new Edelbrock E street fuel injection system. This could net me some better gas mileage, keep the power and give me much better driveability. It is is completely tune-able and auto adjusts it's own fuel mixture. ORRRRR.
I can go with an LS v8 5.3l and have a great mill but the costs for purchase and all the new technology parts will really add up the conversion costs. I will have about the same horsepower and it will definitely give me better gas mileage but how much I don't know.
So if this was your options what would you plan to do? Keep in mind I still need some money to build the rest of the Jeep and it is not just a motor swap.
