Quick thermostat question

Read through everything thermostat related, but didn't see this specifically addressed.
Just installed a new t-stat (after draining rad) because AMC 258 i6 / 4.2l was running hot and I didn't think there was any coolant flowing.
I thought I read that I could leave the rad cap off, run the jeep, then watch the fluid level drop when the t-stat opened. Well, I ran it for a few minutes with the cap off and the water just started to bubble out - a lot. Didn't seem like the water itself was real hot.
Am I making up this whole thing about leaving the cap off?
Is there a way for me to tell if coolant is passing through? There did seem to be a difference in temp between upper and lower rad hoses.
