Never 'assume' ...That can get expensive.
You're going to be changing the gear oil anyway. When you remove the diff covers, look on the outside of the ring gear. There should be a ring gear and pinion gear tooth count stamped.
Are they an open diffs, or some type of Limited slip?

I have no idea, I'm getting everything I listed, prior a 3 inch lift kit with leaf springs and shocks, and a straight 6 for $200

Maybe you should ask the seller this.
Having to buy and then have someone set up a R&P due to mismatched ratios can get pricey, really fast.
