Your our carb may run a little richer without an EGR valve, a simple adjustment would take care of it.
I'm running a non-EGR intakes on both of my 79 360s, one is FI, the other is carb. My 79 stock AMC 304 has the EGR valve.
 
I'm going to test mine, and if it's good I'll keep it. If it's not, I'll block it off. I'm not going to take it off for no reason, nor my going to pay $70 for a new one.
