I always get the best info on this site. Great bunch of guys on here.
 
I bet you could get a 180* thermostat, or even a 160*, if that would make you feel better. Fan shroud helps at low speed. Anything over about 32 MPH you don't need it or a fan.
 
The factory thermostat for the AMC 258 i6 / 4.2l is 195°
Even though you may like to run your engine at a lower temp it may make the design engineers cringe. They know the engine better than you (they designed it). I would stick with an OEM thermostat.

I said it before and I'll say it again: I don't think you have a temperature problem. Your engine "gets up close to 200 degrees" but "never gets above 200 even sitting at alot of redlights".
